  • 4 medium ripe tomatoes diced
  • 1/4 cup fresh basil finely chopped
  • 2 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 baguette sliced into 1/2 inch thick pieces (for toasts)

  • Preheat your oven to 400°F (200°C).
  • Arrange the baguette slices on a baking sheet. Toast them in the oven for 5-7 minutes, or until golden brown.
  • In a bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and olive oil. Stir gently to combine.
  • Season with salt and pepper to taste.
  • Spoon the tomato mixture onto the toasted baguette slices.
